Red Beans and Rice
is a completely underrated meal.
It is DELICIOUS
and everytime I make it
I am like “I need to make this more often!”
Mmmm…
Crockpot Red beans and rice

It is inexpensive, healthy,
and easy to make
After I make it,
I always wonder what took me so long to make it again!
No Need to soak the Beans!
Making the dish even quicker!

 

It is good stuff
and costs so little to make
Plus it make TON of beans!
We freeze the leftovers
in individual portions
to eat for lunches
Mmmm…
maybe I’ll go pull some out of the freezer for lunch today!

 

Crockpot Red beans and rice Ingredients:
  • 1 lb dry Red Beans (no need to pre-soak!)
  • 7 cups of water
  • 1 chopped onion
  • 1 chopped bell pepper
  • garlic to taste (about 4 cloves for me)
  • 1/2 lb sausage (I used Turkey Kielbasa)
  • 2 TBSP Creole Seasoning
  • Hot cooked rice – how much you need depends on your bean to rice ratio preference. I make about 3 cups of dried rice in my rice cooker for this meal – with LOTS of leftovers!

 

Directions:
Put all the ingredients, except the rice, in your slow cooker. Cook on high for 6 hours or low for 8-10 hours. Cook your rice before you are ready to serve. I just put it in my rice cooker about 30 minutes before I want to eat some dinner.
